Palm Sugar and Arak in Sidemen

Sidemen, Karangasem 3 hours All ages

Climb with Kadek's family at first light to tap palm blossoms, then reduce the sap to sugar over a wood fire.

The tuak tapper climbs a lontar palm twice a day, every day. You watch the climb from the ground, carry the bamboo containers, then help reduce the sap in a wide wok until it crystallises into gula bali. Kadek explains the difference between fresh tuak, vinegar and distilled arak — and where each belongs in ritual.
