Open a pod, taste the fruit, ferment, dry and stone-grind cacao with Sari's cooperative in the Tabanan hills.

Bali grows fine-flavour cacao that mostly leaves the island as raw beans. Sari's cooperative kept the whole chain: you pick and open pods, turn the fermentation boxes, taste beans at three roast levels and grind a small batch into chocolate you take with you.

Cacao cooperative organiser and food guide · Pupuan, Tabanan and Denpasar

Sari organised eleven cacao farming families into a cooperative so the fermentation and grinding stay on the island. On her nights off she eats her way across Denpasar, which is how the warung trail started.
